Caimo amarillo is a 10- to 15-meter evergreen tree cultivated for its yellow fruits and used in construction.
Brief History and Description
The Caimo amarillo tree has a pyramidal or rounded crown. Its height is about 10–15 meters. This tree is cultivated for its bright yellow fruits with clear flesh that have a jelly-like consistency and a sweet taste. The wood is heavy and hard, relatively resistant to insect attack, and durable.1 This tree is naturally suited to fertile and wet soil.2
Culinary Usage and Nutritional Properties
Caimo amarillo contains essential minerals and vitamins such as riboflavin, thiamin, vitamin C, vitamin A, phosphorous, vitamins B, niacin, iron, and calcium. It is an excellent source of fiber and energy. It is consumed fresh by removing the meat or cutting it into fruit salad, and it can also be used to make ice cream and fruit juice.3 & 4
Economic and Environmental aspects
The caimo amarillo (abiu) tree has dense, heavy, and hard woods used as lumber in construction.5 The fruits are served in restaurants and vacation resorts combined with other ingredients in Hawaii. In Latin America, they are used for making ice cream and chocolate desserts like fruit tarts and cakes. The Abiu tree can be a good source of income for the farmers due to the usage of its wood, and fruits.6 Abiu is an evergreen tree that can absorb CO2 throughout the year.7
